Pineapple 's Taste and Its Change Over Time-

Pineapple distributed in Japan includes domestic pineapple from Okinawa, and imported pineapples from Philippine, Taiwan, Malaysia, Mexico, Thailand, and Sri Lanka. In case of Dole Japan Ltd., distributed pineapples are common variety and "Sweetio," an improved variety for Japan. This report includes comparison of these two varieties and its taste change over time.

Difference in Taste

When compared to common variety and Sweetio (Figure 1), largest differences found are sourness and sugar content. Sweetio has high sugar content and low sweetness, which brings out strong sweetness. 


Sweetness concentration difference between the two is 77%. according to Dole Japan Ltd., Sweetio "is developed to match Japanese preference, which is less sourness (Figure 2) and strong sweetness. " It is clear that the result matches with Sweetio product concept.

Taste Change Over Time

Figure 3 shows taste data where each pineapple variety's taste is measured twice, day 1 and a week later, day 7. Both variety decreased in sourness ( more than half of day 1) in day 7. Sweetio has more variation in sourness. In case of common variety, astringency, which creates acridity in pineapple, has increased in both foretaste and aftertaste.

Generally, pineapple is known to not ripe. However, when sourness is strong, leaving it for a short period of time soften its sourness due to slight aging (exposure to air) and at the end brings out sweetness. One must be cautious how long it should be left because long aging period decreases sourness even more and cause bland taste. By monitoring its sourness level using taste data, pineapple's peak taste can be achieved accurately.
